The Hippocratic Code lists over 60 medical uses of olive oil.

 

Recent studies, which have focused on the benefits of olive oil to the human body, have found that consumption also provides substantial help in the battle against cardiovascular disease.

 

A recent clinical study, conducted by Dan Flynn, the Olive Center Manager at the University of California, and implemented by both Greek and foreign scientists, found the beneficial effect of olive oil consumption on the human body as a whole.

In the context of this study, olive oils were tested and were selected after analysis by the pharmaceutical department of the University of Athens.

 

The study was conducted in healthy people, approximately 25 years old. Through research, and for the first time, it was found that the Greek extra virgin olive oil, which is rich in oleokanthal, can protect the human cardiovascular system.

 

Phenols and oleuropein contained in the olive oil, are responsible for the bitter taste and the burning that causes us in the throat the swallowing of olive oil.

 

The amount of oleuropein varies according to the variety of olive, the climate and the method of extracting the olive oil in the mill.
